Gluten Free Deep Chocolate Cake

Dessert is back!!!

Ingredients:
Flour Mixture
2/3 cup Gluten Free (GF)  flour
1/3 cup Cocoa Powder
1    tsp  Salt
2 1/2 tsp Baking Powder
Egg Mixture
1/4 cup Sugar
1/4  cup Light Brown Sugar
6 tbs Soy Spread (Butter substitute)
2 tbs Mayo
1 large egg
1 tsp Vanilla Extract

1/2 cup Soy milk (room temperature)

1 can Chocolate frosting (Casein free)

Directions:
Sift GF flour, Cocoa Powder, Salt, & Baking Powder.  Set aside.  In separate, large bowl mix Sugar, Brown Sugar, Soy Spread, Mayo, Egg, & Vanilla.  Add flour mixture to egg mixture.  Gently add Soy Milk.

Bake at 325 degrees F for 20 minutes or until no longer sticky inside.  (Check center with toothpick.)  Cool.  Decorate with Chocolate Frosting.

Yields dozen cup cakes.


Sugar Cookies

gluten-free (gf) and casein-free (cf)

Ingredients:

2 eggs 

1 cup Sugar 

3/4 cup Soy Spread 

1 tsp Vanilla 

3 cups GF Flour 

1/2 tsp Baking Soda 

1 tsp Salt


Directions: In a large bowl whisk eggs, sugar, soy spread & vanilla. In separate bowl mix gluten free flour, baking soda & salt. Add egg mixture. Mix well. Refrigorate 15 minutes. Spoon out cookie dough. Bake at 350 degree about 7-9 minutes.

 



Shrimp Boil for Two


Ingredients:

1 cup Cold Water

1 medium Onion, sliced

3 tbs Old Bay Seasoning

6 Links (breakfast sausage)

4 Corn on the Cob minis -frozen

4 Medium Red Potatoes quartered

                                         12 Shrimp Frozen (peeled and cleaned)

                                          4 oz Smoked Sausage Sliced

                                          Salt to taste

Directions:

Bring water to a boil. Add sliced onion and Old Bay Seasoning.  Cut breakfast links into thirds. Add to pot.  Add Frozen corn.  Cook 7 minutes. Add potatoes.  Cook 10 minutes.  Add Shrimp. Cook till shrimp are pink and no longer translucent.
